Myron Mixon Smoked Chicken Wrapped With Bacon Recipe

The next book I'm sharing via the ABRAMS Dinner Party blogging group is Myron Mixon's Keto BBQ: Real Barbecue for a Healthy Lifestyle. Just in time for the Summer BBQ season, this cookbook shows how to transform traditional BBQ so it fits within Keto guidelines. If you're following a Keto lifestyle, this book is a must to transform your BBQ game. Not Keto? No problem...I'm not either! The book is chock full of excellent recipes that taste amazing for EVERYONE! If you're not familiar with Mixon, he's the "winningest man in barbecue" -- with more than three decades of winning BBQ contests. That means he knows his smoked meat! Mixon lost 100 pounds following the Keto eating plan, learning how to eat the food he loves and maintain his weight loss for more than 2 years.

Keto BBQ has a ton of amazing recipes -- including White Chili with Smoked Chicken, Blackberry Spareribs, and Smoked Bacon Cheeseburgers. However, my family quickly decided Mixon's BBQ Bacon-Wrapped Chicken Breasts -- which feature an easy BBQ sauce/marinade and a simple homemade sugar-free chicken spice rub -- was the perfect dish to feature. Before hitting the grill for smoking, each marinated and spice-rubbed chicken breast is wrapped in bacon. The end result is chicken breast that's supremely juicy and flavorful...with a perfect smoky flavor. Everyone gave this recipe and enthusiastic thumbs up!

BBQ Bacon-Wrapped Chicken Breasts

Ingredients (makes 4 servings):

  • 4 large boneless, skinless chicken breasts
  • 1 cup Tangy Sweet BBQ Sauce
  • 1 medium white onion, diced
  • 3 cloves garlic, crushed
  • 1 cup BBQ Chicken Rub
  • 8 thin slices bacon

For the BBQ Chicken Rub (NOTE: recipe makes 2 cups. Simply store extra rub in an airtight container -- away from heat and light -- for up to 6 months):

  • 2/3 cup chili powder
  • 2 TBS monk fruit sweetener
  • 4 TBS kosher salt
  • 1/4 cup onion powder
  • 1/4 cup garlic powder
  • 1 tsp. cayenne pepper

For the Tangy Sweet BBQ Sauce:

  • 2 TBS canola or other neutral oil
  • 1 TBS onion powder
  • 1 TBS garlic powder
  • 2 tsp. monk fruit sweetener
  • 6-ounce can tomato paste
  • 3/4 cup cider vinegar
  • 1 tsp. kosher salt
  • 1 tsp. hot sauce

NOTE: The recipe didn't call for it, but I added 1 cup water to the BBQ sauce as it simmered -- because it was quite thick otherwise. The added water produced a pourable sauce, but didn't water down the sauce's bold flavor.

Directions:

Step 1: The day before you plan to smoke the chicken breasts, make the BBQ Chicken Rub and Tangy Sweet BBQ Sauce. To make the rub, add the chili powder, monk fruit sweetener, salt, onion powder, garlic powder, and cayenne pepper to a bowl. Use a whisk to completely combine the ingredients:

Step 2: To make the Tangy Sweet BBQ Sauce, warm the oil in a medium saucepan over med-high heat. When the oil is warm, add the onion powder, garlic powder, monk fruit sweetener, tomato paste, cider vinegar, salt, hot sauce, and water. Stir to completely combine. Cook over med-low heat, stirring occasionally, until the sauce slightly thickens -- approx. 15 minutes.

Step 3: Place them in a shallow pan. Add the onion, garlic, and 1 cup of the BBQ sauce. Mix to coat, cover/seal, and refrigerate overnight to marinate and develop flavors.

Step 4: When you're ready to grill the chicken the following day, preheat your smoker to 350℉ -- or light your charcoal grill and add a handful or two of smoking chips like we did! Remove the chicken from the marinade and shake off excess sauce. Apply the BBQ Chicken Rub liberally to both sides of each piece.

Wrap each chicken breast in two slices of bacon, securing slices with toothpicks. Place the chicken in a large aluminum baking pan.

Step 5: Place the pan in the smoker and cook for about 1 hour -- or until the internal temperature reaches 165℉.

Step 6: Remove the pan from the smoker and let the meat rest, uncovered, for 15 minutes. Then slice the breasts with a sharp serrated knife. Serve with the reserved cup of Tangy Sweet BBQ Sauce on the side for dipping.

This chicken is definitely a great go-to smoked and grilled chicken recipe! The bacon infuses smoky flavor...and helps ensure the chicken breasts -- which are notoriously hard to keep from becoming dry -- juicy and tender. The homemade sugar-free rub and BBQ sauce complement the smoky chicken...without overwhelming it. Whether you're following a Keto diet or? This recipe is winner of a chicken dinner!
